While growing up in the southern province of Calabria, Italy, Teresa Polimeno learned and developed her cooking skills from her Italian mother. Homemade Italian food and traditional Italian cooking came in handy with this large family of nine children. After arriving in New York City in 1959 she traveled to Houston, Texas to meet her husband. Teresa later began cooking the traditional Italian meals with her new family. Our original family recipes were typical meals which included a hearty plate of pasta with tomato sauce and a delicious green salad sprinkled with olive oil, balsamic vinegar and spices. Appetizers were always served in an Italian home meal and the southern part of Italy had its regional specialities. Mediterranean cuisine consisted of bruschetta, pork loins-bracioli, seafood, culinary cheese recipes, olivata spread, veal saltimbocca alla romana, plenty of marinated vegetables, recipe choices for chicken dishes, lasagne, gourmet Italian tomato sauces and as always a delicious green salad with fresh basil, olive oil and tomatoes. Oh, and don't forget, a nice loaf of Italian bread especially made for dipping sauces.
